Spaghetti Carbonara

I felt inspired to make spaghetti carbonara after watching Anthony Telford, smart man, on the 9 am show cook up traditional and westernised versions. The traditional version was made in a bowl cooking the eggs gently with hot spaghetti only. The westernised version had a bit of cream and was cooked in the pan but off the stove. I made my own version without the bacon of course.

Ingredients:
1/2 a pack of 500g dried spaghetti
2 cloves of garlic, chopped
1 red chili, sliced thin
olive oil
tsp of mixed herb
2 eggs beaten up
salt & pepper
parmesan cheese

How to:
- Cook the pasta til al dente.
- Heat up the olive oil and fry off the chopped garlic, chili, mixed herb til golden
- Add cooked pasta to pan and remove pan from stove
- Add the beaten eggs, mix well. Add some pasta water if a bit dry.
- Season with salt & pepper and sprinkle some parmesan cheese over the top.

Yummy yet simple. My first ever try at making spaghetti carbonara. You could add some beef if you so wish, frying it off with the garlic.
